Almond cream from the Parrinello farm in Caltanissetta is one of the most interesting projects presented for the “Campagna amica” category at the Coldiretti Sicily Oscar Green night.
Young people, capable of innovating the company production system in a sustainable way, linked to the territory. They are the under 40 winners of the Oscar green, the Coldiretti Giovani Impresa competition, which this year were awarded in an exceptional location last September 28: the Ancient Theater of Taormina.
38 years spent among the almond trees, Salvatore Parrinello has always been committed to rediscovering one of the typical crops of Sicily so as to make it the center of the world. In light of the rediscovery of the product also as a snack and as a breakfast, the entrepreneur has increased the plantations, developing a transformation system by innovating the cream and modifying, increasing it, the quantity of almond contained, which is considerably higher (more than double) to the average of creams already on the market. Thanks to a cold methodology developed for its production, he managed to keep the organoleptic and nutritional properties intact by not modifying any of the components of almond oil.
